I'm not sure how right I am, but I'll give this a shot. I think that nitrogen has the lone pair because the free electron pair in nitrogen shares those electrons with a proton to form a cation. So when NH3 is reacted with H20, it shares that electron pair with the hydrogen atom in H2O.

An example could be the heating of ethylene (C2H4). The heat causes the pi bonds to break by rotating it back and forth, thus breaking that bond.

For elements with expanded octets, is there no maximum number of bonds it's allowed to have? Is it just the number of bonds that will satisfy the lowest formal charge rule?

A wave function is used to describe it because an electron has wave like properties. So because we cannot know both the momentum AND the position, we utilize a wave function.

From what I learned in AP chem, there is no "acceptable" percent yield. When it asks for percent yield, its simply asking for you to calculate how much is produced vs the theoretical. The problems will typically ask what is the percent yield and will not ask you to interpret the percent yi...
