Because unlike the other molecules in the reactions we see, water is a pure liquid and we therefore omit it in the ICE tables.

K is the equilibrium constant so the reaction needs to be at equilibrium in order for us to calculate K. Q, on the other hand, can be calculated at any time during the reaction and there does not need to be an equilibrium.

Because the reactants are used up to form the products, I would assume that the reactants will always show a negative change and so have -x on the table and the products will be increasing and have +x as the change.

You need to write out the chemical reaction, sometimes they are given to you in the question, other times the wording of the question gives it away, like A and
B react to make C and D or something similar to that.

When calculating both Q and K we put the products over the reactants, so it is the same as K.
