Can someone explain the thought process of determining which bonds are broken and why in the first step of a Friedal-Crafts alkylation?

Generally, the bonds that are broken are dependent on the slight polarity created between the atoms. This makes the bond vulnerable and thus it is the most likely to break. You indicate the slight polarity by $\delta$ and its sign. Those elements that are more electronegative, are generally more likely to have a -$\delta$. From this, you can identify which bond is likely to break from the $\delta$s.
