How can you tell how many steps a reaction has?

Can you clarify your question? Are you talking about a single overall reaction that for which you have to find the individual steps, or do you mean something else?

There are two main mechanisms you should know.

The first one is eletrophilic addition reaction. This is where you usually attach a molecule (with two species) to a molecule with a double bond. This reaction is always two steps.

The second one is substitution reaction (also known as SN2). This is where one species breaks off from a molecule and another one binds to that site in its place. This is always one step.
