How can we visualize which carbon atoms interact with each other? Specifically looking at page 115, can only C1, C3, and C5 interact? Or can C1 interact with other carbons in the ring?

Just to clarify, do you mean page 115 in the course reader?

To know which carbons interact with which other carbons, you just have to draw the 3D structure.
In the chair conformation, axial substituents on carbons 1, 3, and 5 will interact with each other, and axial substituents on carbons 2, 4, and 6 will interact with each other.
In the boat conformation, the axial substituents on carbons 1 and 4 will interact with each other (this is called a "flag pole" interaction)
