How does an open beaker imply constant pressure?

This is because the open beaker is open to the entire atmosphere which is much bigger than the beaker so it makes the beaker's pressure irrelevant to any change and that is why pressure is constant. It is just like when you add a bucket of water into the Ocean it really does not make a difference on the Ocean.

When the beaker is open, it experiences a constant pressure since the pressure it experiences is the atmospheric pressure around it which will not change since the atmosphere is too large for any change to be considered significant.

In an open system, the pressure of the system=the pressure of the exterior because there is nothing preventing the exterior pressure from maintaining its pressure within the system. However, in closed and isolated systems (where no matter can be exchanged), the exterior pressure cannot interact with the system because they have no physical contact.

This is the same idea as adding a drop of water into the ocean. A drop of water compared to the volume of the ocean is so small that it will not affect it just like how the whole universe is tiny compared to the beaker

The constant pressure exerted onto the beaker is the atmospheric pressure which is much larger than any pressure that the system exerts on the surroundings.

Can someone explain why irreversible processes are held at constant pressure?

An open system means that matter and energy is transferred between the solution and its surroundings. The pressure in the beaker is the same as its surroundings because it is open to air and the same as normal air. This is 1atm.
