I know that P x delta V = delta n x R x T but how do you calculate delta n?

You can see the change in moles from the balanced chemical equation.

Also for most of the reactions you will want to use the change in moles of gases not of all substances

so to find delta n you would take the moles from products subtracted from moles from reactants?

Yes, in many cases it's aqueous substances as well.
