Do our values calculated for work grant the maximum theoretical value one can get or simply a guaranteed value that is experimentally tested, and could be replicated?

It's a maximum theoretical yield. In real life, things tend to go toward entropy. When doing experiments, there's always a small percentage of error.

Yes, the reversible pathway calculates the maximum value for work. However, most reactions, including biological reactions, use the irreversible pathway because it is more efficient and quicker.
