Why don't deltaU or deltaH fully describe the system? So, why is entropy necessary to describe the system and what information does it provide?

Delta U and delta H do not fully describe the system without entropy. Entropy is the likelihood (probability) a system will be in a particular start. The combination of delta U delta h and entropy can give more information as to how the system will change.

DeltaU describes the change in internal energy of a system and DeltaH describes the change in total heat content of the system. Entropy is the measure of uncertainty, which is very significant in describing a system.
