When calculating entropy do we always use Cv for constant volume and Cp for constant pressure?

Yes, but most of the time I believe the question will refer to Cv

Cv is for constant volume and Cp is for constant pressure, yes.

Constant volume uses Cv and Constant pressure uses Cp. Cv is normally used though.
