Temperature

In Gibbs Free Energy, should we always use Kelvin, and is that because we want a positive value?

I think it's best to keep your answer in Kelvin since it's the standard unit for Gibbs Free Energy! I'm not entirely sure if the reason is so that it's a positive value, but it makes sense to me. Hopefully someone can clarify that part

We use Kelvin because that's the absolute temperature, representing the average kinetic energy of the molecules, which is what's relevant in thermodynamics. Using any other unit wouldn't work because the conversion factor between Kelvin and Celsius is additive, not multiplicative, so using only Kelvin keeps things consistent.

When using the equation for Gibbs Free Energy it is appropriate to use Kelvin not any other unit of measurement.
