Cellular Conditions vs Lab conditions

In gen bio, we learnt that the values of delta G and delta H could change depending on whether it was in a cell or a lab. Why would these values be different if the same reaction is occurring? i feel the difference would be in how quickly or efficiently the reaction occurs.

Due to various circumstances, the values of delta H (enthalpy) and delta G (Gibbs free energy) can fluctuate between a lab and a cell. Reactions with particular enzymes and cellular constituents frequently take place in a cell under physiological settings, which affects the reaction's efficiency and rate. Different regulated experimental circumstances in a lab can have an impact on the kinetics of reactions and overall energy changes.

I think temperature is a big difference between the two conditions, so that may affect things like reaction rate, etc.
