In example 6K.1, why is the C2H2O4 turned into H2C2O4?

I don't think the order of the compound matters that much, so they probably just switched the order of the carbon and hydrogen for convenience, but it does not change the chemical makeup of the compound!

Both chemical formulas represent the same compound regardless of the order they are written in.

I think it just has to do with the ways to write an equation: C is usually put at the center as it is a central atom within this compound, but the more electropositive atom is usually put at the right (C) and the more electronegative at the left (O). Those conditions conflict here, so both ways of writing the compound are still valid I believe.
