I was attempting to fill out the table, but I was unsure of what type of radiation would be involved with reading (x-ray, suntan, and microwave are all a little more straightforward). Would reading simply be in the "visible light" category?
Yes, I think you're right. I mean, would you want to (or could you) read under either UV or infrared light rays? They aren't even visible to the human eye.
The visible spectrum is called as such because the only light that we can see with our eyes falls within this very narrow band of wavelengths (700nm-400nm). Any other light, such as UV and microwave and x-rays can't be seen by the human eye. So if you were reading something with your eyes that would naturally involve light only in the visible band.
