what exactly is a photon and if you could see it what would it look like

A photon is basically a wavelength of light, and is typically portrayed as a squiggly line coming from the sun in many diagrams that involve a photon.

When you are changing energy levels (n), the difference in energy is given off as a photon when you are moving from a high energy electron to a lower energy level. This represents the principle of conversation of energy.

Since a photon does not have mass, is it better to think of a photon as a concept/idea that can be assigned an amount of energy rather than a specific 'particle' that you can visualize like a proton or an electron? not sure if this makes sense

The best way to think of a photon is to think of it as light. It is important to note that a photon does not ever have any mass to it.

How is it possible that photons have momentum if photons do not have a mass and if momentum equals mass time velocity?

Energy = momentum * speed of light for the photons, so momentum of a photon is related to its energy.

You just need to manipulate the equations and its easy to see the relationship between photons and momentum especially if you do dimensional analysis.
