I'm confused, if the number of photons only influence the intensity of the light instead of the energy of the light, then why can the book ask questions like the photo attachment?

Photons do influence the amount of energy. Each photon is like a packet of energy so if the light produces a certain amount of photons, the energy radiation is influenced upon that.

You can utilize the information given in the question to derive an answer without considering photons in terms of their energy as a particle/wave. Because you are given wavelength, use the equation E=hv to find the energy and multiply it by the number of photons.
