For the anode side, the I2 is in solid state, but the solution manual included Platinum on the anode side of the cell diagram too. Why is that?

At times, you will have to use an inert conductor such as platinum as en electrode to transfer electrons!

Platinum would be included as an anode because it is used as a salt bridge in the galvanic cell in order to rebalance the respective charges of the solutions and allow the transfer of electrons to proceed.
