When you write the cell diagram do you always leave out stoichiometric coefficients? Also, how do you know when you need to add a platinum on the outsides?

Yes, always leave out the coefficients. I believe you add platinum when there is no solid metal to act as an electrode to move electrons from anode to cathode.

Yes, that is correct. No coefficients in your cell diagram. Use platinum in instances when you have no solids in your redox reactions.
