I read that the potential of hydrogen is set as zero to set a standard to which other cells can be compared to (positive or negative). Not sure if this is completely accurate but it seems like it makes sense.

In actuality Hydrogen's absolute electrode potential isn't ACTUALLY 0, however it is set to 0 in order to create a basis of comparison with other redox reactions. This creates a reference point for other redox reactions which makes it easier to measure and discuss these reactions.

hydrogen's cell potential is zero so that it is possible to calculate the cell potential of the other electrode. Standard potentials only give us the overall cell potential and not just one electrode. Therefore, we arbitrarily set the standard potential of hydrogen to zero at all temperatures.

It just the standard because we can only calculate the change rather than the actual value
