In the equation DeltaG= -nFE does the n refer to delta n of a reaction?

n refers to the amount of electrons being transferred
so for example if we're dealing with the equation
Zn(s) + Cu2+ (aq) → Zn2+ (aq) + Cu(s)
the n value would be 2 mol because 2e- is being transferred in the reaction

No, n is the number of moles of electrons being transferred.
