For the single elements given, which standard reduction potentials should I use? Like for example one of the listed elements is Fe how should I know if I use the standard potential of Fe^3+ or Fe^2+???

Use the half reaction from the appendix that has both your species present in it.

In general, when looking at the overall redox reaction use the half reaction that will cancel what needs to be cancelled (since there are multiple half reactions for the same elements). A lot of time I think the problem will make it pretty clear which half reaction should be used based on the components of reaction.
