Reactions that are initiated by mixing the reagents can be studied by the stopped-flow technique, in which solutions of the reactants are forced into a mixing chamber very rapidly and, within a few milliseconds, the formation of products is observed spectroscopically. This procedure is commonly used to study biologically important reactions such as protein folding and enzyme reactions.

I think it just allows us to measure the initial rate of a reaction if we have a limited amount of reactants or if the reaction happens really fast (like faster than the human eye can see).
