What is useful about knowing the order of the reactants?

Knowing the order allows you to define a rate law for a reaction. When integrated, a differential rate law will allow you to predict how concentrations change with time.

If the reaction is elementary, then the order of a reactant is simply the stoichiometric coefficient of the reactant.

If the reaction is not elementary, the orders must be deduced from a series of experiments and will not match the stiochiometric coefficients.
