How can we tell which compound is the catalyst based on the elementary reactions? How would we determine the reaction mechanism when we are not told which reaction is slow and which is fast?

A catalyst is neither formed or used up, so it would appear first on the reactant side and then the product side of the chemical equations. This is different than an intermediate, which is created and then used up. You would need to know which reactions are fast or slow, or analyze the reactions at different concentrations to figure out the mechanisms.

What is useful about catalysts? Do they lower activation energy or just progress the reaction so it overcomes the activation energy faster?

A catalyst will first appear to the left as a reactant, and then as a product in the following reactions because it speeds up the reaction but doesn't get used up.
