I heard that each metal has their own word function. How does that exactly work?

Each metal has a different work function, which is basically the energy threshold that is required to be met, in order for photons to be ejected by the surface of metals.

Therefore, the same amount of light would eject different numbers of photons depending on the metal/surface.
