In my notes, I have written:
Energy, E= p*v
For a photon: E = p*c and E = hv = hc/λ

How can E equal both p*v and p*c? Or did I write it down wrong

c in this case is the value of v. V represents the velocity, and c is the speed of light, so in cases of photons, they move at the speed of light! Your notes are correct. :)
