When solving for the Heisenberg uncertainty, does the greater than or equal to sign turn into just an equal sign?

No, ≥ cannot "change" into = since they are different signs. However, in uncertainty problems, if it helps you to think of ≥ as = while solving, you can since you will never be dividing by a negative number (but you should still write/read ≥).

Also, it wouldn't be an equal sign because since it is "uncertain", it can never equal a certain number-- there must be a range of uncertainty where the exact position and velocity of an object lie at a certain time.
