Is it true that once the principle quantum number increases, the number of orbitals increases as well?

Yes, I believe this statement is true. For instance, if you were to increase the principal quantum number from 1 to 2, this would result in the number of orbitals going from 1 to 3, as you now have the 1s, 2s, and 2p orbitals as opposed to the initial 1s orbital.

Yes, as you increase the principal quantum energy number the number of electron shells also increases!

Yep, as far as I know a larger quantum number means more shells too.
