why does NaBr have a greater ionic character than NaI?

Br has a stronger ionic character than iodine, therefore NaBr is stronger. You can tell apart the stronger ionization by going up and right in the periodic table.

I thought the greater difference in electronegativity corresponds with a greater ionic character? NaBr has a lower difference in electronegativity than NaI doesn't it?

No NaBr definitely has more ionic character. Br is above I on the periodic table and therefore Br is more electronegative and there is a greater difference between Na and Br than there is between Na and I.

The ionic character which is just Ionic Bonding which to my understanding corresponds to periodic trends in which a bond between two molecules in which a large electronegativity difference exists between the two atoms would cause them to be more electronegative. I hope this helps with any confusion.

I'm just a little confused because this doesn't apply when comparing MgCl2 and CaCl2 because CaCl2 has a greater ionic character.

That is because Ca has a lower electronegativity than Mg, producing a greater electronegativity difference between that metal and the Cl.

By large electronegativity difference we are referring to the periodic trends on the periodic table. Electronegativity increases as you move from left to right across a period on the periodic table. So the top right-hand corner on the periodic table where Florine is at will be the most electronegative.

I believe the difference between ionic and dipole is that ionic is a force between an ion and polar molecule, while dipole is between a hydrogen bond that is slightly positive on one molecule and slightly negative on another.
