Valence Electrons

How do elements actually keep their shape and the same number of electrons as they bond and detach from other elements. Is it just the magnetic pull that keep them together? Once they lose or gain electrons how do they regain or get rid of them after?

In the case of covalent bonds, since the shared electrons help satisfy its electrons needs (or the octet guideline), those electrons are also attracted to the nuclei of the other atom, keeping it more stable.

The elements are held together by electrostatic attractions. In the case of ionic bonds, the atoms are attracted to one another due to their opposite charges.

In the case of NaCl Na becomes a cation (+) and Cl becomes an anion (-) Na+Cl- to form sodium chloride. With this the ionic bond it is now stable. The - charge indicates that the electron was added and a + charge means a electron was lost. If the charges aren't labeled then the bond isn't considered stable.
