writing the structure

How do you draw the structure for elements that have less than 8 valence electrons? Meaning, is there a certain side we start drawing dots for the first, second, third, and so forth electrons?

No, it does not matter which side you begin placing dots on.

It doesn't matter which side the electrons are drawn on, but they are usually spread around the atom evenly, so they don't start pairing until there is at least one electron on each side.

There is no particular order by which you should draw your Lewis dot structure; a rule you should be wary of is Hund's rule, which states that due to e- repulsion, e- in same subshell will occupy different orbitals and with parallel spin because it gives the lowest energy.

start off wherever you want. It completely up to you but try to make it balanced in a way i guess
