Lewis Structure for Compounds

how do you know to draw two separate lewis structures for ammonium sulfate and just one for glycine (H2O(NH2)COOH)?

Ammonium sulfate is a compound made of two ions that are bonded together because of charge, whereas glycine is an organic molecule.

Glycine is a single molecule, but ammonium sulfate is an ionic compound comprised of two polyatomic ions.
