How do you know when. you need to form a double bond or if the bond between the atoms must stay as single bonds?

Look at the formal charge of the atoms involved in the Lewis structure. Formal charges should add up to 0, unless there is a charge indicated on the molecular formula, and it is more favorable to have a formal charge on the terminal atoms.

So to make sure we have the correct Lewis structure we calculate the formal charge of the possible structures we have drawn?

It all depends on the formal charge. Remember that you add bonds + dots to figure out the formal charge.

MichelleRamirez_2f, yes. The formal charge helps us indicate which structure is the most stable (more formal charges of 0), which is favored.
