I believe they bend away from each other because as the atoms are connected together in the molecule they continue to interact. Meaning, the non-central atoms of the molecule are trying to stay away from each other/ repel each other making the structure more angular. He used water as an example in lecture.

Atoms will arrange in the structure that corresponds to low energy, so atoms will try and space out to avoid repulsive positive forces

Another great example of a lewis structure bent is H20. The reason for this bending is because the lone pair of electrons have little more repulsion and cause the bonded electrons to get a bit closer together.

I think this unbalanced slanted structure is due to the fact that some elements have a higher binding affinity to electrons and pull them closer to their nucleus, creating partial charges that still repel other elements a little bit so that the structure is not perfect.
