If resonance structures are supposed to be more stable, why don't we see more molecules in a resonance form in nature?

First elements do not have a resonance, molecules do. Second, in nature molecules will go to the lowest energy state which involves (for our proposes) looking at formal charge.

In nature, you would see a resonance hybrid- a blending of the different lewis resonance structures. This is representative of the different places electrons can be.
