For 3F15, why does AsF3 have a higher boiling point than AsF5?
I guess my question is also: how is AsF5 polar while AsF3 not, as the answer key says?

AsF3 is not polar because even though there are dipole moments, the geometry cancels out. Polar molecules have higher boiling points than nonpolar molecules.

For both molecules, the electronegative force cancels out, but since AsF5 has more electrons, it has a higher boiling point.
