How does the ball and stick model change and the angles between the bonds change?

Hello!
The difference in bond angles is determined by multiple factors. It is determined by the symmetry of a molecule and the electron arrangement of a molecule (number of lone pairs/bonds). The values that you see in the textbook are experimentally tested through spectroscopy and x-ray diffraction.

I would say that the ball and stick model is a simplified version of molecules used to display the geometry in 3d space. The shape of the molecule and therefore the arrangement of the atoms around the central atom will change according to the VSEPR theory to create the maximum distance for electron electron repulsions with lone pairs repelling stronger than shared electron.
