Resonance Bond Lengths
If you have a resonance structure is it correct that the bond lengths would be in between the length of a single bond vs a double bond?

Pretty much! The bond lengths are the average of bond lengths across all of the structures, so each bond length is the same.

Yes, the length would be a value in between (the average) the amount of double and single bonds within that particular bond.

It isn't always between just a single bond and a double bond since there can also be triple bonds, but basically it's just an average length between all bonds.
