2 regions of electron density
Why can't molecules with two regions of electron density have a bent shape?

A molecule with two regions of electron density can only have a linear molecular formula.

Regions of electron density repel each other and want to be as far apart as they can, so if there are only two regions they would be farthest apart in the linear shape, at 180 degrees.

why do we not count a double bond as an area of electron density when figuring out hybridization?

We do not count double bonds as two regions of electron density because a double bond only means that the two atoms are closer in distance and more strongly bonded. It does not mean that the an atom is bonded twice or to separate electron regions.
