Does it make a difference how we write h20 when we are naming coordination compounds? I have noticed that sometimes it is written as h20 and other times it's oh2.

Writing it as is a mater of convention, it is written like that to indicate that the Oxygen is what is bound to the metal. But writing it either way is technically correct and both ways would be accepted on the tests.
