Could someone explain what a chelate complex is?

Chelate complexes consist of a bond between a polydentate ion and a central metal ion. Chelating ligands can bind cations very tightly.

A chelate complex is when there are two or more separate coordinate bonds between a polydentate ligand and a single central atom.

A chelate complex contains at least one ligand that forms a ring of atoms that includes the central atom.
