In order for a ligand to be polydentate it must have on or more lone pairs because it has to have a lone pair to donate

Yes, the definition of a ligand is just that it is a Lewis base and can donate at least one pair of electrons.

Is a molecule polydentate as long as it has a lone pair to bind?

How can a molecule bind in more than one area? Is it because there are elements that have lone pairs on them?
