Coordination Number
When calculating the coordination number of a substances does it only count that of the central elements bonds?

I believe you are correct in that coordination number only refers to the number of ligands attached and does not pay attention to whether a ligand is a mono or bidentate.

Yes, the coordination number is found by counting the number of atoms boned to the central atom.

Yes! Coordination number is counting the number of atoms bonded without regarding how many times an atom is bonded (monodentate, bidentate, etc.)

Yes, the coordination number only takes into consideration the central atom's bonds.

Additionally, something to keep in mind, if a coordination compound has a ligand that is bidentate (2 teeth, 2 bonds) such as en, then this would be accounted for in the coordination number. For example, for [Co(en)2(CO)2]Br the coordination number is (2*2) + 2 = 6
