What exactly are the roles of ligands in biological processes and what do they connect to in the body?

Chronium - assists insulin in control of blood sugar
Iron - facilitates electron transfer in the oxidation of carbohydrates, proteins and fats
Cobalt - for Vitamin B12
Manganese, Nickel, Copper and Zinc - critical for enzime function.

Do the functions of these particular ligands effect the structures of the molecules? Or just the composition?

Ligands in biological process trigger signals and have the ability to bind to the active site of a protein through intermolecular forces (ionic bonds, hydrogen bonds, Van der Waals forces).

ligands can attach to a transition metal to form a Heme Complex. This then allows for an open binding site. In the example of myoglobin, the open binding site is used to transport oxygen (o2 binds to the transition metal that is bound to the ligand). but there are many more biological applications of ligands.
