Ice Tables

When do we use ICE tables? I assumed it was when we had to find concentrations of the products, given K and the initial concentration(s).

Yes, we use ICE tables when we want to find the concentration of a product in an equilibirum reaction involving either a weak acid or base.

In some problems, I've seen that ICE tables are used to solve for the equilibrium concentrations/partial pressures of reactants and products.

You would typically use the ICE tables to try and find/solve for the partial pressures or equilibrium concentrations of reactants and products.

Ice tables are used for partial pressures and concentrations in weak acids and bases.
