No, I don't think we have to know about them. But it's cool to see why we can just plug in the equilibrium concentrations and explain why we don't need to include water in K. So it's more to explain why we exclude water.

Which activity is this post referring to? Is it the one simulating why water is unnecessary in K?

I think that the most that we need to know about activities is that the activity of liquids and solids is 1, which is why they are not included in the equilibrium constant expression.
