For HW 5I.11 how would the concentration of SO2, O2, and SO3 be converted from nmol to mol. For example how is the concentration of SO2=1.20nmol converted to 1.20x10^-3 mol?

From my ebook it says 1.20 milli-mol SO2, I think you may have misread it or there was a typo.

The question gives the units in terms of mmol, which is millimole. There are 1000 millimoles in 1 mol, so 1.20mmol SO2 divided by 1000 gives 1.20x10^-3 mol.

Additionally, since this problem is asking for Q, you must then divide those mole values by the volume (.500 L), and then use those concentrations to calculate Q = [SO3]^2 / ( [O2] * [SO2]^2 ).

Could you not just convert the mmol values to mol so you can calculate the concentrations that way?

Yes, you could just calculate the mmol to moles (1 mol = 1000 mmol) and then divide that by the volume (0.500 L) to get the concentration.
