How would I know that AlCl3 would form Al(H2O)5OH2+ instead of Al(OH)3?

AlCl3 dissolves in water to form Al3+ which then complexes with water to form ions, [Al(H2O)6]3+. This is because Al3+ is a lewis acid and thus an electron acceptor (accepts electrons from oxygen in water). [Al(H2O)6]3+ can then release protons, thus making the surrounding solution acidic, to lower its charge, yielding [Al(H20)5OH]2+.
