if there are multiple protons, how do you know how many are donated?

Acids/bases are deprotonated/protonated one at a time. So there would be multiple reactions to show the loss of the protons in polyprotic acids.

For example phosphoric acid, 3 protons to get to the phosphate ion.

Pertaining to a strong acid, the first deprotonation will result in a H+ and a weaker acid. The second deprotonation will be weaker than the first.
