H2O - Acid & Base

Since water can be an acid or a base in a reaction, how do its properties change? Do OH, H2O, and H3O have anything in common? How much does the addition or subtraction of an H alter the molecule (other than making it acidic or basic)?

I believe these molecules are pretty different because they have different charges, which would mean they have different properties and interact differently with things around them. So, yes, the addition/subtraction of an H alters the molecule greatly.
